BANANA NUT BREAD
I love Banana Nut Bread and knew this was another family recipe that I had to recreate so I could still enjoy it! Only real ingredients and no dairy, chemicals or preservatives to worry about harming your body! I know I have to just get a better picture of this so I plan on making it again soon. So just trust me when I say this tastes better than this picture looks! Ha! This is great to make when you have company staying at your house or when you want to bake a gift for someone. It makes a great breakfast or dessert! Yum!
BANANA NUT BREAD (VEGAN)

- 2 bananas
- 1/2 cup Coconut sugar
- 1 & 3/4 cup spelt flour
- 1/2 cup unsweetened apple sauce
- 1 Flax egg 1tbsp ground flax + 3 tbsp of water (non vegans can sub 1 egg)
- 1 tsp vanilla
- 1 tsp salt
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1 tbsp chopped walnuts optional
Instructions
- Heat oven to 350.
- Combine flour & baking soda in bowl & set aside.
- Mix banana, sugar, applesauce, flaxseed meal/water mix, vanilla, cinnamon & salt in blender until smooth & cream.
- Add the wet ingredients to dry ingredients & stir together.
- Pour in an oiled 9x5 loaf pan. Top with walnuts.
- Bake for 35-45 minutes depending on your oven. Use the fork method to check.

RESTAURANT DISH REVIEW – SUN CAFE – STUDIO CITY, CA
I love the Sun Cafe restaurant. I have never had a bad meal from there. It's all organic and vegan. They get the majority of their food from local Farmers Markets. Their Mac and Cheese is made from quinoa pasta with tomatoes, cashew cheese sauce and garlic pecan crumble on top. When you're in need of comfort food, but don't want to feel guilty about it, order this! It's so delicious and the best part is – it's dairy free, preservative free & all organic! I give it 5 stars! MUST order!
TIP: HOW TO CLEAN YOUR PRODUCE
Clean your produce by soaking it in 3 parts water, 1 part vinegar. ESPECIALLY if it's not organic!! This kills bacteria and pesticides. It also helps fruits and veggies to last longer. Soak in water for 15 minutes then rinse with cool water. I use the 365 brand of organic distilled white vinegar from Whole Foods to clean mine!

- Pumpkin or Squash Seeds
- Paprika
- Salt
Instructions
- Preheat oven to 275
- Place seeds on baking sheet with parchment paper. Sprinkle w salt & paprika.
- Bake for 20-25 min. Test one before taking them out. If it tastes like crunch popcorn - they're done!
