Why You Should Start The Day With Oats
Oats is a great way to start your day.
They've shown to be good for heart health. Since the number one killer in America is heart disease, oats are definitely a good preventive.
They've also been shown to help control blood sugar and assist with weight-loss.
Oats are full of fiber so they're great for digestion as well.
We're a family that loves oatmeal, but let's get real, there's only so many times you can eat it the same way.
If you follow me on Instagram and watch my stories you know we were on an overnight oats kick, then it went to “fresh oatmeal” as my son, Rowan, calls it. I make a sweet cashew milk by adding extra dates, then pour it over oats and berries and eat it like cereal. It's really good!
But now that the weather is starting to turn cooler this Baked Oatmeal has been our latest obsession.
I actually forgot about baked oatmeal… I used to make this Superfood Baked Oatmeal all the time.
I wanted to do something more seasonal, and Rowan has been all about apples lately.
Apple Cinnamon Raisin Baked Oatmeal is comforting on a chilly morning, and puts us in the mood for all the holidays to come!
Cinnamon Raisin Baked Apple Oatmeal
Ingredients
- 2 cups Oats (gluten-free if needed)
- 2 cups Cashew Milk (or other plant-based milk)
- 1 cup Apples (chopped, small cubes)
- 1/2 cup Apple Sauce (I use unsweetened)
- 2 tbsp Ground Flaxseed
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 2 tbsp Date Syrup (maple syrup works too)
- 1 tsp Cinnamon
- 1 tsp Vanilla Extract
- 1/3 cup Raisins
- 2 tsp Apple Cider Vinegar
- 1/4-1/2 tsp Salt (optional - I dont use it, but I know some people like a little saltiness)
- 1/4 cup Walnuts or Peacans (chopped, optional)
Instructions
- Preheat oven to 375 F and line a 9x9 baking pan with parchment paper. Add the ground flax to the 2 cups of milk mix together and set aside. In a large bowl, add the oats, baking powder, baking soda, cinnamon and salt (if using) and mix together. Then, add in apple sauce, milk+flax mixture, date syrup, vanilla and apple cider vinegar. Stir until eveything is combined. Add apples, raisins and nuts (if using).
- Transfer the mixture to baking pan. Bake in the oven for about 40 minutes. It will turn a light golden brown on top. Check with a toothpick to make sure it comes out clean. Allow it to cool for just about 5 minutes or so. Then serve with more apple, dairy-free yogurt, more date/maple syrup or your other favorite oatmeal toppings. Store leftovers in the fridge up to 4 days.
