Superfood Salsa

This Bean and Quinoa mixture can be used as a salsa, on a salad or just eaten on it's own.

This recipe has been a blog favorite since I posted it over a year ago.

I've made a little tweak in the recipe and that's why I'm sharing it again with you all. It was actually featured on Cameron Diaz's site in 2015 as one of her snack picks for the Super Bowl.

It might not be football season, but it doesn't mean you can't enjoy this Superfood Salsa all summer long!

It makes the perfect dish to take to any outdoor festivities as it's easy to transport and eat.

Superfood Salsa

It's called Superfood Salsa because it's loaded with antioxidants, plus anti-inflammatory and detoxing properties.

The beans and quinoa also pack this dish with plant-based protein.

Those two ingredients alone make this one hearty salsa!

It will fill you up without filling you out, which also helps prevent “unconscious eating” afterwards. It doesn't weigh you down either.

This salsa actually gives you a boost in energy.

No lie – quinoa is an energy boosting food and it's great to eat especially after a workout.

Superfood Salsa Lettuce Leaf Tacos

If you're not a fan of black beans, you can easily swap it out for your favorite bean like kidney, pinto or even a white bean like I did in the original recipe.

This isn't a dip that's just good with chips either.

I love using it as “taco meat” in lettuce wraps.

It also works in tortillas if that's more your thing.

Superfood Salsa

When it's so hot outside no one wants to be slaving away in the kitchen all day.

Literally the longest part of this recipe is making quinoa – and if you have some left over in the fridge, even better!

While the quinoa is cooking, then start to chop up all your veggies.

Once that's done, all you do is combine everything together. Simple as that.

Superfood Bean Salsa

This Superfood Salsa can be eaten with chips, on a salad or just by itself. It's filled with plant-based protein and other essential vitamins and nutrients. It will keep you full without filling you out. Please use all organic ingredients when possible!

Ingredients

  • 1 cup of cooked Quinoa
  • 1 15 oz can Beans, drained and rinsed
  • ½ cup Onion chopped (red, yellow or white)
  • ½ cup Red Pepper chopped
  • ½ cup Grape Tomatos sliced
  • 2 tbsp Cilantro chopped
  • 2 tbsp Jalapeño chopped (optional)
  • 2 tbsp Apple Cider Vinegar
  • 1/8-1/4 tsp Cumin
  • Dash of Olive Oil

Instructions

  • Add everything to a large bowl and mix together.
  • Enjoy it with chips, as a salad, or like a taco in lettuce leaves or tortilla of choice. It's also great by itself! 

Notes

You can add in as many veggies or other seasonings you prefer.
