This Superfood Salsa can be eaten with chips, on a salad or just by itself. It's filled with plant-based protein and other essential vitamins and nutrients. It will keep you full without filling you out. Please use all organic ingredients when possible!

Ingredients
1cupof cooked Quinoa
115 oz can Beans, drained and rinsed
½cupOnionchopped (red, yellow or white)
½cupRed Pepperchopped
½cupGrape Tomatossliced
2tbspCilantrochopped
2tbspJalapeñochopped (optional)
2tbspApple Cider Vinegar
1/8-1/4tspCumin
Dash of Olive Oil
Instructions
Add everything to a large bowl and mix together.
Enjoy it with chips, as a salad, or like a taco in lettuce leaves or tortilla of choice. It's also great by itself!
