Some other veggies that would be good to add to this combo are cucumbers, pepperoncini or tomatoes. The lettuce can also be subbed for kale.

Ingredients

  • 2 cups Leafy Greens (I like romaine, red or green leaf lettuce)
  • 1 cup Purple Cabbage (chopped)
  • 1 Red Bell Pepper (chopped)
  • 3 Carrots (chopped or shredded)
  • ½ cup Broccoli (chopped)
  • ¼-½ cup Onion (chopped)
  • ¼ cup Marinated Artichokes (chopped)
  • 2-3 tbsp Capers
  • 1.5 cups Garbanzo Beans
  • ¼ cup Pumpkin Seeds (adds more crunch)

Dressing Ingredients

  • 3 tbsp Extra Virgin Olive Oil
  • 3 tbsp Balsamic Vinegar
  • 2 tsp Dijon or Brown Mustard
  • 1 Garlic Clove (minced)
  • 1 tsp Italian Seasoning (or dried oregano)
  • Salt and Pepper (to taste)

Instructions

  • First mix your dressing ingredients in a mason jar and shake it together. You can also whisk it in a bowl. Add all the vegetables to a large bowl. Pour the dressing on top and mix together. Serve immediately and store leftovers for 2-3 days in the fridge.
