If you're a salad lover then you must try this Veggie Chopped Salad. It's packed with veggies and flavor from the dressing. It can be customized to your liking so feel free to add or swap out certain veggies.
2cups Leafy Greens (I like romaine, red or green leaf lettuce)
1cup Purple Cabbage(chopped)
1Red Bell Pepper(chopped)
3Carrots(chopped or shredded)
½cup Broccoli (chopped)
¼-½cup Onion(chopped)
¼cup Marinated Artichokes (chopped)
2-3tbsp Capers
1.5cups Garbanzo Beans
¼cupPumpkin Seeds(adds more crunch)
Dressing Ingredients
3tbsp Extra Virgin Olive Oil
3tbspBalsamic Vinegar
2tsp Dijon or Brown Mustard
1Garlic Clove (minced)
1tsp Italian Seasoning (or dried oregano)
Salt and Pepper (to taste)
Instructions
First mix your dressing ingredients in a mason jar and shake it together. You can also whisk it in a bowl. Add all the vegetables to a large bowl. Pour the dressing on top and mix together. Serve immediately and store leftovers for 2-3 days in the fridge.
