This date bark was a viral hit on instagram last year and I just realized I didn't have it on my website. It's a healthy, no-bake dessert that requires just a couple ingredients – dates, cashew butter, peanuts and chocolate.

Honestly it tastes like a healthy candy bar, and my entire family loves it! If you have allergies you can easily sub any of the ingredients except for the dates and chocolate. Feel free to use any nut or seed butters.

Date Bark

This is a healthy, no-bake dessert that only requires a couple ingredients. It can be customized as well for any allergies or preference.

Ingredients

  • 20 Medjool Dates
  • 3-4 tbsp Cashew Butter (or any nut/seed butter)
  • 1/4 cup Peanuts (chopped) (or any nuts or seeds)
  • 2/3 cup Chocolate Chip
  • 1-2 tbsp coconut oil or avocado (optional for melting the chocolate)
  • Sea Salt (optional for topping)

Instructions

  • Line a sheet pan with parchment paper. Pit the dates and place them open side up on the parchment paper. You want them to touch each other so they'll stick together. I did 4 dates per row. Once all the dates are open and face up, place another piece of parchment paper on top and use a glass to press the dates down and together.
  • Spread a thin layer of cashew butter (or whatever nut/seed butter you're using) evenly over the dates. Top it with the chopped peanuts (or whatever nut you’re using). Melt the chocolate with or without oil and spread it on top of the cashew butter and peanuts. Make sure it’s evenly spread. Sprinkle with salt and place in freezer for at least 30 minutes. Once it’s frozen chop or break apart into pieces and enjoy! Keep leftovers in the freezer for best results.
