Re-use nut butter jars with this overnight oats recipe. Using the nut butter jar is not only eco-friendly, it gives the oats even more flavor and protein.

Having breakfast already made makes mornings so much easier. This recipe only uses dates and blueberries for sweetness. No added sugar to start your day off right. If you don’t want to use the dates, sub them for 1-2 tbsp maple syrup. 

Use any berries you’d like. Add more toppings like almond butter, bananas, etc before eating if desired! Double, triple, quadruple the recipe for multiple days.

Nut Butter Jar Overnight Oats

Ingredients

  • ¾ cup Rolled Oats (gf if needed, preferably organic)
  • 1 cup Date Milk (or other non-dairy mik*)
  • ¼ cup Blueberries (frozen or fresh, or other fruit)
  • 1 tbsp Ground Flaxseed (chia seeds also work)
  • 1 Empty jar of nut butter

Instructions

  • First, you want to blend your milk and dates together. Blending the dates in the milk will make a natural sweetener. You could also use a tablespoon or two of date syrup/ maple syrup or honey and just stir it in.
  • In a mason jar or bowl with a lid, add the berries, oats, flax/chia seeds and then the milk. Stir it all together. You want to make sure all the oats have been touched by the milk.
  • Cover and then place in the refrigerator overnight. The next day, open and stir it again. If there’s too much liquid you can add more chia seeds or oats, mix again and let it sit for a few minutes to thicken. You can also add other toppings like nut butters, goji berries, banana or more berries. These can be made 5 days in advance so you can make more for additional days

*If you do not want to make date milk, use other plant-based milks and add in 1-2 tablespoons of maple syrup or honey.
