Tomato Basil Cashew Cheese Sauce is now my new go-to pasta sauce when I’m in a time crunch! It’s easy to make because you just throw all the ingredients into a food processor or blender and you’re done! Great for nights when you don’t have a lot of time to cook. It’s dairy free, but still has the creaminess of regular cream sauces from the cashews. Antioxidants are potent in this sauce from the fresh basil, garlic and oregano. It’s also packed with B vitamins from the Nutritional Yeast.

Making your own sauce is the best way to go. It’s fresh and you know exactly what’s in it, which makes it easier for your body to process, unlike the ones at the store filled with a lot of additives. I put it on some spaghetti squash, but it goes great with any pasta and zucchini noodles!

Easy "Cheesy" Tomato Sauce

Ingredients

  • 3 Roma Tomatos
  • 1/4 cup Cashews Soak cashews at least 2 hours for easier blending
  • 1 & 1/2 tbsp Nutritional Yeast
  • 1 tsp Oregano
  • 2 tsp Lemon Juice
  • 2 Garlic Cloves
  • Handful Fresh Basil

Instructions

  • Put all ingredients in Food processor or Blender and blend until creamy and smooth
