This salad is gluten-free and full of healthy ingredients! Black-eyed peas are said to bring good luck in the new year so we always eat it on New Years Day!

Ingredients
1cup Cooked Quinoa (cook according to package)
1 (15 oz) can Black-Eyed Peas (drained and rinsed)
½cupOnions(chopped)
½cupRed Peppers(chopped)
½cupCherry Tomatoes (chopped)
2tbspCilantro (chopped)
2tbspJalapeño(chopped)
2tbspRed Wine Vinegar(can also used Apple Cider Vinegar)
Add all the ingredients to a large bowl and toss together. Taste to see if you need to adjust the seasonings or dressing at all. Serve as is or on top of bed of leafy greens. It also works as dip for chips!
